CONYERS, GA— When Mellow Mushroom Headquarters notified Keith Merritt in late
November that all servers in the restaurants were required to be alcohol certified by the
end of the year, his response was simple: Thanks to Marchman Consulting and RASS, we
are already certified. But he did begin reaching out to other stores to recommend
Marchman’s successful programs highly.
Merritt observed that Marchman’s delivery of the mandated material causes his
employees, especially his younger servers, to see the long-term consequences of their
actions. Mellow Mushroom’s competitor, Atlanta Pizza, echoes the training technique.
Mike Hall, the owner, offered that the class provides a stimulating evening by making a
tedious course an interesting couple of hours.
Examples of the success that Marchman includes helping local governments with new
ordinances and training have increased compliance rates by approximately 36% for all
the communities. The City of Conyers has maintained a compliance rate of over 95% for
the last six years. As for a comparison to the other training programs, Marchman
surveyed approximately 167 attendees who also took Servsafe, with 84% preferring
Marchman’s class. A comment regarding the comparison offered, why sit through four
hours of generic material when you can hear material presented creatively for just $30?
Marchman has presented on approximately 410 college campuses on alcohol risk
management, demonstrating an ability to reach the younger servers who coincidentally
commit most of the violations. Additionally, he utilizes his knowledge as a bartender,
working in a package store, and as a law enforcement officer with his experience
teaching college psychology courses for 18 years.
To assist the Mellow Mushroom stores in Georgia and meet the deadline, Marchman is
willing to work quickly to come to a dedicated store in person or conduct the training via
Zoom. In addition, understanding a store’s entire staff may not be able to be a single
training event will work to offer accommodations.
